Green Tomato Pie Recipe
This green tomato pie is a vegetable pie made with spiced green tomatoes. Pepped up with cinnamon for flavor, the green tomato pie is baked in a ready to bake pie shell and topped with a crust mix. Served with meats or fish with a savory sauce or relish, this green tomato pie is very flavorful.
Ingredients
| Green tomatoes | 8 Medium, peeled | |
| Lemon | 1 , thinly sliced | |
| Cornstarch | 2 Tablespoon | |
| Water | 2 Tablespoon | |
| Sugar | 1 Cup (16 tbs) | |
| Butter | 2 Tablespoon | |
| Ground cinnamon | 1/2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| 1 frozen pie shell and frozen top crust or pie-crust mix | ||
Directions
Boil tomatoes and lemon; cover.
Simmer 10 minutes, until tomatoes appear transparent.
Combine cornstarch and water; add to tomato mixture.
Add sugar, butter, cinnamon, and salt; stirring constantly, bring to boil.
Boil 1 minute; remove from heat.
Follow pastry instructions for baking 2 crust pie.
Place filling in pie; add top crust.
Seal; flute edges.
Cut steam vents in top crust.
Bake in preheated 425°F oven approximately 35 minutes.
