Green Tomato Hot Dog Relish Recipe
Ingredients
| Green tomatoes | 4 Cup (16 tbs) | |
| Red bell peppers | 4 Cup (16 tbs) | |
| Onions | 4 Cup (16 tbs) | |
| Cabbage | 4 Cup (16 tbs) | |
| 12 pods hot chiles, ground | ||
| Salt | 1 Cup (16 tbs) | |
| Vinegar | 4 Cup (16 tbs) | |
| Sugar | 6 Cup (16 tbs) | |
| Mustard seed | 2 Tablespoon | |
| Celery seed | 2 Tablespoon | |
Directions
Combine the tomatoes, bell peppers, onions, cabbage and chiles in a large bowl.
Sprinkle with the salt.
Let stand at room temperature, covered, for 8 to 10 hours.
Rinse and drain well.
Combine the vinegar, sugar, mustard seed and celery seed in a bowl; whisk to blend.
Combine the tomato mixture and vinegar mixture in a large kettle over medium high heat; bring to a boil.
Ladle into hot sterilized jars, leaving 1/2 inch headspace; seal with 2 piece lids, and process in a boiling water bath for 10 minutes; or let cool to room temperature, then cover and store in the refrigerator.
