Ingredients

 
3 lb green tomatoes
 
4 cooking apples
 
1 cucumber
 
4 onions
 
4 oz sultanas
 
1 lb Demerara sugar
 
1 dessertsp. ground ginger
 
1 dessertsp. mustard
 
1/2 tsp. cayenne pepper
 
1 quart vinegar

Directions

Peel and slice apples, onions and cucumber.
Chop tomatoes.
Put all the ingredients together in a large pan and bring gently to the boil.
Simmer for about an hour or longer, until the mixture is thoroughly soft, stirring frequently.
Put into warm jars and seal.
