Ingredients

 
2 lbs. green tomatoes
 
2 lbs. cooking apples
 
1/4-lb. demerara sugar
 
small piece root ginger
 
juice of 2 lemons
 
11/2 pints vinegar
 
1/2-lb. onions
 
1/2-lb. raisins
 
1/4-oz. red chillies
 
1 oz. garlic
 
salt
 
1 lb. onions

Directions

Skin the tomatoes and put them through a mincer, together with the apples, raisins, onion and garlic.
Boil the sugar and vinegar to a syrup.
Add all the other ingredients (the chillies and ginger should be put into a muslin bag).
Bring to the boil and simmer slowly, without a lid, until the mixture thickens.
Remove the muslin bag and bottle the chutney.
Cover when cold.
