Green Rice Salad with Tomatoes Recipe
Ingredients
| Rice grain | 1 1/2 Cup (16 tbs) | |
| Olive oil | 4 Tablespoon | |
| Wine vinegar | 2 Tablespoon | |
| Black pepper | 1/2 Teaspoon | |
| Salt | 1 Teaspoon | |
| Tarragon | 1/2 Teaspoon | |
| Cucumber | 1/2 Cup (16 tbs) | |
| Green pepper | 1/4 Cup (16 tbs), chopped | |
| Parsley | 1/4 Cup (16 tbs), chopped | |
| Chives | 1/4 Cup (16 tbs), chopped | |
| 1/4 cup chopped green onion, Mayonnaise or salad dressing, Salad greens | ||
| 2 hard-cooked eggs, sliced | ||
| Ripe tomatoes | 3 , sliced | |
Directions
Boil rice according to directions on package.
Drain, and mix at once with olive oil, vinegar, black pepper, salt and tarragon.
Let stand to cool.
Then mix with cucumber, green pepper, parsley, chives and onion.
Mix in mayonnaise to moisten.
Taste for seasoning.
Heap on greens, and garnish with eggs and tomatoes.
