Ingredients

 
1 cup (1 small can) salsa verde mexicana (Mexican green tomato sauce)
 
1 cup (lightly packed) fresh parsley
 
1 clove garlic
 
2 tablespoons vegetable oil
 
2 cups beef or chicken stock, or 2 cups water plus 2 bouillon cubes
 
Salt and pepper
 
1 cup uncooked rice

Directions

Put salsa verde, parsley, and garlic in an electric blender and blend until liquefied.
Heat oil in a large saucepan.
Add blended sauce and mix well; cook about 5 minutes.
Add stock to saucepan and bring to boiling, stirring to blend ingredients.
Season to taste with salt and pepper.
Add rice, stir, cover tightly, and cook until all liquid is absorbed (about 25 minutes).
