Ingredients
4 green peppers (medium size)
1 cup canned corn
3/4 cup diced tomatoes
1/4 cup finely chopped celery
1 tablespoon finely chopped onion
2 slightly beaten eggs (if eggs are jumbo, use 1 egg)
1/2 cup soft bread crumbs
2 tablespoons melted butter
Salt to taste
Freshly ground pepper to taste
Directions
Remove top and seeds from peppers.
Parboil 5 minutes.
Drain well.
Combine remaining ingredients; mix thoroughly.
Stuff peppers.
Place upright in greased baking dish.
Add 3 tablespoons water.
Place in 325°F toaster oven; bake about 1 hour.
