Ingredients

| Pepper | 1/4 Teaspoon (Filling:) | |
| Cornstarch | 1 Tablespoon (Filling:) | |
| 2 stalks scallions, finely chopped | ||
| Green peppers | 4 Large (Filling:) | |
| Oil | 2 Tablespoon (Filling:) | |
| Chicken stock | 1/2 Cup (16 tbs) (Filling:) | |
| 1 tablespoon cornstarch mixed with 1 tablespoon soy sauce | ||
| Water | 1/4 Cup (16 tbs) (Thickening:) | |
Directions
Mix the ingredients for the filling well together and set aside.
Remove the stalks from the peppers and scoop out the seeds.
Wash well and fill with the meat mixture.
Heat a pan, add the 2 tablespoons oil and when hot place the peppers in it open side up.
Add the chicken stock.
Cover the pan, lower the heat and cook gently for an hour.
Remove the peppers and place in a shallow bowl.
Add the thickening to the gravy in the pan and turn up the heat, stirring constantly.
When it is thick and smooth, pour over the peppers and serve immediately.
