Healthy Green Pea Soup Recipe
Ingredients
| 2 x 10 oz. packages frozen green peas | ||
| Butter/Margarine | 2 Ounce | |
| Water | 1 1/4 Tablespoon | |
| Sugar | 1 Teaspoon | |
| Salt | 1 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Flour | 4 Tablespoon | |
| 5 cups chicken stock or water and chicken bouillon cubes | ||
| Onions | 2 , finely chopped | |
| Sour cream | 8 Ounce | |
| Caraway seeds | 1/2 Teaspoon | |
Directions
Thaw frozen peas in a colander under running cold water, drain and place in pan.
Add half the butter or margarine, water, sugar, salt and pepper and simmer until peas are tender.
Add flour and cook for 1-2 minutes, stirring.
Add chicken stock, bring to the boil, reduce heat and simmer for 30 minutes.
Cool then rub through a food mill or puree in an electric blender.
Heat remaining butter or margarine and in it saute chopped onion until soft and golden.
Add to soup.
Add sour cream and caraway seeds, cover and cook over low heat for 10-15 minutes, stirring frequently.
