Green Pea Soup Recipe

Ingredients
6 cups shelled green peas
1 medium-size onion, sliced
1 large potato, diced
1 large carrot diced
Few sprigs mint
4 cups water or unsalted chicken stock
Pepper to taste
Directions
Cook vegetables and mint in water or stock until all are tender.
Remove mint and put soup through a food mill.
Add pepper, reheat if necessary, and serve.
Note: If you prefer a thicker soup, add a mixture of butter and flour until the desired consistency is reached.
For a cream soup, substitute milk for half the stock adding it after the soup has been put through the mill.
