GREEN PEA SOUP Recipe
This creamy and delicious Green Pea Soup is a must to have on a cold Winter day! Top it with a swirl of cream or yoghurt.
Ingredients
Shelled or soaked dried green peas - 3 cups
White stock (or stock made from boiling pea pods) - 2 pints
Green mint - 1 bunch
Top milk - 1 cup
Butter - 1 ounce
Semolina - 1 ounce
Sugar - 1/2 teaspoon
Spring onions - few, chopped
Small lettuce - 1, shredded
Salt and pepper – as desired
Directions
MAKING
1. If you are using fresh peas, boil pods in two pints water for 15 minutes.
2. Mash it well before straining to prepare stock. Make two pints if needed.
3. In a pan, melt butter.
4. Add onions and cook it for a minute.
5. Add semolina, peas, salt and pepper. Stir well.
6. Add stock and bring it to a boil. Simmer for 15 to 20 minutes. If using dried peas, simmer longer with mint.
7. Sieve to make a puree. Keep some peas aside to use for garnish.
8. Re-heat stock, add shredded lettuce and sugar. Simmer for 10 minutes.
9. Add puree, top milk and bring it to a boil.
SERVING
10. Serve Green Pea Soup topped with cream or yoghurt.
