Green Pea Pankis Recipe

Green pea pankis are pancake like preparation made with rice and lentil flour along with green peas. Flavored with cumin and coriander and moistened with curd, the green pea pankis are coked on a griddle between banana leaves and best served hot with green chutney.This is a special low sugar recipe great for diabetics as well as for people on low carb diet. Ingredients

 Rice flour1⁄3 Cup (5.33 tbs)
 Udad dal flour1 Tablespoon
 Low fat curd1 Teaspoon
 Green chilies2 , finely chopped
 Green peas1⁄4 Cup (4 tbs), coarsely ground
 Chopped coriander2 Tablespoon
 Crushed cumin1⁄2 Teaspoon
 Salt To Taste
 Banana leaves3
 Oil1 Teaspoon (For Greasing)
 Green chutney1 Cup (16 tbs) (For Serving)

Directions

In a bowl, combine rice flour, urad dal flour, curd, green chillies, green peas, coriander, cumin seeds, salt and approx.
1/2 cup of water.
Mix well to make a thin batter.
Cut banana leaves into circles using a 75 mm (3") diameter cookie cutter.
If you do not have a cookie cutter, cut them into squares.
Apply a little oil on each banana leaf.
Heat a tava (griddle) and arrange half of the banana leaf circles on the tava.
Spread 2 teaspoons of the batter on each leaf and sandwich with another greased banana leaf on top.
Cook the panki on both sides till light brown spots appear on the banana leaves and the panki in between peels off the banana leaf easily.
Serve hot with green chutney.
