Green Mung Bean Curry Recipe

Green Mung Beans are packed with proteins and are an excellent source of valuable nutrients. This curry is a great combination with Rotis/Chapathis.

Ingredients

 Whole green moong dal/Moong beans1 Cup (16 tbs)
 Tomatoes1 , chopped
 Mustard seeds2 Pinch
 Jeera/Cumin seeds1⁄4 Teaspoon
 Dry red chillies3
 Onion1⁄2 Cup (8 tbs), finely chopped
 Garlic2 Clove (10 gm), finely chopped
 Ginger2 Inch, finely chopped
 Cloves3
 Cinnamon sticks3 Small
 Hing2 Pinch (asafoetida)
 Turmeric powder2 Pinch

Directions

Soak Moong Dal in 2 cups water overnight or for at least 8 hours. Pressure cook until moong beans turn tender (approx 3 whistles). Keep aside.

Heat a skillet. Add 3 tbs oil, when hot, add mustard seeds and allow them to splutter. Add cumin seeds, curry leaves, cloves, cinnamon sticks,dry red chillies (break them into halves),chopped onion, ginger and garlic.

Saute until onion begins to change color. Add chopped tomatoes, turmeric powder, salt, chilly powder and hing. Mix well. Cover and cook until tomatoes turn tender.

Add the pressure cooked moong bean. Cover and continue to cook for another 5 minutes. You may also mash some of the moong beans to get a thicker gravy.

Serve Hot with any Indian Flat Bread.

Loved this dish...had forgotten how to cook Mung Beans and found your website. I soaked the the beans overnight, cooked them in lightly salted water for under an hour. I did not have all the spices you listed so I improvised with coriander seed, cumin seed, chili flakes, and turmeric. I also added kale to the other vegetables and combined all. It was hearty and a very comforting dish. Thanks!

Raw Beans generally taste a little bitter but they will taste nice and tender once they have been pressure cooked. It is recommended that you soak the mung beans overnight before pressure cooking them the following morning. If your are unable to pressure cook/do not have a pressure cooker, then you may boil the beans in lightly salted water after pre-soaking the beans for 10 hours at least.
