Make the usual mayonnaise sauce, then just before serving it add a handful of finely chopped fresh mixed herbs—be quite sure they are absolutely dry—and if possible a little chopped shallot.
A delicious variation is to use finely chopped and almost pulped watercress instead of mixed herbs.
