Green-Goddess Salad Recipe
Ingredients
Green-Goddess Dressing:
Mayonnaise or Cooked Salad Dressing- 1 cup
Tarragon Vinegar- 1/4 cup
Anchovy Fillets- 6 nos., chopped
Parsley- 1/4 cup, finely chopped
Green Onion- 2 tablespoons, finely chopped
Chives- 2 tablespoons, snipped
Dry Mustard- 1/2 teaspoon
Salt-1/4 teaspoon
Pepper- 1/8 teaspoon
Salad:
Crisp Salad Greens- 2 quarts, cut into bite-size pieces
Cooked Chicken- 3 cups, cubed, chilled
Tomatoes- 2 medium, sliced
Directions
GETTING READY
Make Green-Goddess Dressing:
1) In a small bowl, place together all dressing ingredients and mix well.
2) Cover the bowl and refrigerate, for several hours or overnight, to allow flavors blend.
MAKING
3) In a bowl place the salad greens.
4) Arrange the chicken cubes in center of greens.
5) Spoon the dressing and toss to coat chicken and greens well.
SERVING
6) Pile the salad in a serving plate and garnish Green-Goddess Salad with tomato slices.
