Green Garlic Sauce (Pesto Genovese) Recipe
Ingredients
3 cloves garlic, peeled
3 tablespoons minced sweet basil leaves or 2 1/2 teaspoons dried basil leaves ,
3 tablespoons grated Parmesan or Romano cheese
1 tablespoon chopped pinenuts or walnuts
1/4 teaspoon salt
4 to 6 tablespoons olive oil
1 tablespoon chopped fresh parsley
Directions
In a mortar, mix garlic, basil, cheese, nuts, and salt.
Grind mixture with a pestle to a smooth paste.
Still grinding, add very gradually enough olive oil to make a smooth sauce.
Stir in parsley.
To serve, add desired amount of sauce and a tablespoon of butter to hot pasta and mix well at the table.
Accompany with grated cheese, if desired.
