Green Chile Soup Recipe

The green chile soup is made with green chilies and chicken broth. Flavored with cheese, paprika, garlic and onions and added tomatoes, the green chili soup is spicy and apptetizing when topped with cheese and cilatntro.

Ingredients

 
2 tablespoons butter or margarine
 
1 tablespoon oil
 
4 to 5 cloves garlic, finely chopped
 
1 medium onion, chopped
 
2 teaspoons paprika
 
4 cups chicken broth
 
1 1/2 pounds tomatoes, chopped
 
1 4-ounce can diced green chiles
 
1/4 teaspoon chili powder Salt and pepper to taste
 
2 8-ounce containers plain yogurt
 
4 ounces Jack or Cheddar cheese, shredded
 
1 tablespoon chopped cilantro or parsley

Directions

Melt butter in large stock pot; add oil.
Saute garlic until lightly browned.
Remove garlic and set aside.
Add onion to butter; saute until soft.
Add paprika; saute 1 minute.
Add chicken broth, tomatoes, chiles, chili powder, salt and pepper.
Bring to a boil; reduce heat and simmer 20 min-utes.
Stir in yogurt slowly; heat thoroughly over low heat.
Add reserved garlic.
Ladle into soup bowls; sprinkle with cheese and cilantro.
