Green Beans Lyonnaise Recipe

Ingredients
1 lb (500 g) green or wax beans
1/4 cup (60 mL) chicken consomme or water
1/4 tsp (1 mL) thyme
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper
2 tbsp (30 mL) butter
1 cup (250 mL) onions, thinly sliced
1 tbsp (15 mL) butter
1 cup (250 mL) fresh bread cubes
Directions
Cut green beans into slivers.
Place in a 4-cup (1 L) microwave-safe casserole dish with the chicken consomme or water and the thyme, cover.
Microwave at HIGH 8 minutes.
Drain liquid.
Keep beans covered.
Place the 2 tablespoons (30 mL) butter in a microwave-safe dish and melt 1 minute at HIGH.
Add the onions, stir.
Microwave 2 minutes at HIGH, stir well.
Salt and pepper to taste, stir.
Pour over the green beans.
Place 1 tablespoon (15 mL) butter in a microwave-safe pie plate and melt 1 minute at HIGH.
Add the bread cubes.
Stir until well coated with the butter.
Microwave, uncovered, 1 minute at HIGH.
Stir well.
Microwave 30 to 40 seconds or until browned inside (break one to check as they remain pale on the outside).
They should be crisp, buttery and flavorful.
Pour over the onions.
If needed, warm up the whole dish, covered with waxed paper, 1 minute at HIGH.
Serve.
