Ingredients

 
1 pound fresh green beans
 
Vegetable cooking spray
 
1 teaspoon olive oil
 
1 medium-size green pepper, cut into strips
 
1 small onion, sliced and separated into rings
 
1 (14-ounce) can whole plum tomatoes, undrained and chopped
 
1/3 cup water
 
1/8 teaspoon freshly ground pepper
 
1/8 teaspoon dried whole oregano
 
1 tablespoon grated Parmesan cheese

Directions

Wash and trim beans, set aside.
Coat a skillet with cooking spray; add olive oil and place over medium-high heat until hot.
Add green pepper and onion, and saute until onion is tender.
Add beans, tomatoes, water, pepper, and oregano.
Cover and cook 30 minutes or until beans are tender.
To serve, sprinkle with Parmesan cheese.
