Ingredients
1 lb (500 g) fresh green string beans
3/4 cup olive oil
2 medium brown onions, finely chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 -2 cups water
Directions
String and slice the beans lengthwise.
Heat the olive oil in a saucepan and fry the onions until they are reddish-brown.
Mix in the beans, salt and pepper.
Saute for 10 minutes.
Stir in the water, cover and simmer very slowly, adding more water if necessary, until the beans are very soft.
Remove lid and continue to simmer, uncovered to absorb excess juice — approx 10 minutes.
When cooked the beans should be very brown and soft.
Adjust salt and pepper to taste.
To eat these beans the Lebanese way, hold a fork in one hand and push portions onto small pieces of Lebanese bread held in the other hand.
