Directions

GETTING READY
1. Wash and prepare the green beans according to package directions. Cook them in hot water and then drain. .

MAKING
2. In a large saucepan, melt the butter and then stir in milk. Add the vinegar, salt, thyme, tarragon, parsley and onion and stir constantly until smooth. Add 1 tablespoon boiling water and beat with rotary beater if mixture starts to curdle.
3. Pour half the hot sauce into egg yolks and mix well and then return the mixture back to the double boiler. Add bouillon cubes; cook until thick, stirring frequently.

SERVING
4. Serve sauce over hot beans and serve hot.
