Ingredients

4 cans green beans
2 can cream of mushroom soup
1/4 tsp. pepper
3/2 c. milk
3 c. crushed cheese crackers

How to make Green Bean Casserole

Step1- combine green beans, cream of mushroom soup, pepper, and milk.
Step2-Bake for 30 minutes at 375.
Step4- Last 4 minutes add cheese crackers on top.

Green bean casserole is a classic thanksgiving side. But, I agree, cream of mushroom is not the healthiest of choices. Great idea shanti to just switch to the light version. Another option to give green bean casserole its creamy taste could be to use fat free sour cream and fat free milk. Margarine is of course the no brainer too. Green beans are so versatile ...I just love adding them to my meal !!

This recipe or variations was very popular in the US back in the 1950's and 1960's. Cream of mushroom soup and the crackers do not fall into healthy choices due to high fat grams. I am surprised you are using canned green beans in place of fresh or frozen. My daughter made this old green bean casserole for Thanksgiving dinner and served it to her husband's family who are from the former Yugoslavia and they all loved it. She was laughing as her grandmother used to make it and she knew how easy it was.

Another option is to top it with French fried onions/shallots. Some also add some soy sauce to this. I have seen some add toasted almonds.

The cream of mushroom soup is loaded with fat grams, maybe the light cream of mushrrom soup would work just as well since you like this retro recipe.

Cream of mushroom Soup 1 cup contains 203 Calories 203Calories Total Fat 13.6g

ouch! however

Light Cambell's Cream of Mushroom Soup contains 70 calories 2.5 grams of fat!

now the crackers 3 oz per serving is 600 calories 30 grams of fat

plus the milk

Healthy? Well the green beans are very healthy for sure! There are many healthy ways to prepare greenbeans if you care about watching your intake of fats.
