Green Bean And Red Pepper Salad Recipe
Ingredients
| 2 cups cooked fresh or frozen green beans, cut into 1-inch slices | ||
| 1 red bell pepper, seeded and chopped | ||
| Onion | 1 Tablespoon, chopped | |
| 1 cup low-sodium tomato juice | ||
| White wine vinegar | 1 Tablespoon | |
| Dried basil leaves | 1/4 Teaspoon | |
| Pinch of dry mustard | ||
| Garlic | 1 Clove (5gm), minced | |
| Black pepper | 1/4 Teaspoon | |
Directions
1. Toss string beans with red pepper and onion in a large glass bowl.
2. Combine tomato juice, white wine vinegar, basil, mustard, garlic, and black pepper.
3. Pour tomato dressing over string bean mixture. Chill for 1 hour.
