Green and White Salad Recipe
Ingredients
400 g (14 oz) young turnips no more than 5 cm (2 inches) across, peeled
50 g (2 oz) roughly chopped fresh parsley
4 tablespoons cultured buttermilk or plain unsweetened yogurt
1 tablespoon lemon juice
1 tablespoon chopped fresh chives
pinch of salt (optional)
freshly ground black pepper
paprika, for dusting (optional)
Directions
1. Cut the turnips into paper-thin slices directly into a serving bowl, using a mandoline if possible.
2. Stir in all the remaining ingredients except the paprika.
3. Dust lightly with paprika, if liked, just before serving.
