Green And White Pasta Salad Recipe
Ingredients
1 garlic clove
Dash each salt and pepper
2 tablespoons plus
2 teaspoons olive oil
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh parsley
1 teaspoon mashed drained canned anchovies (optional)
2 cups cooked small macaroni shells (1 cup regular macaroni and 1 cup spinach macaroni)
1 medium red bell pepper, seeded and chopped
1/4 cup grated Parmesan cheese
8 pitted black olives, sliced
Directions
Using mortar and pestle or back of knife, crush garlic with salt and pepper.
In small bowl combine garlic mixture with oil, basil, parsley, and if desired, anchovies; set aside.
In salad bowl combine remaining ingredients; add garlic mixture and toss well to coat.
Cover and refrigerate until chilled.
