Green Tomato Soup Recipe
Ingredients
1/4 cap batter
2 onions, sliced
8 green tomatoes, washed and cut into chunks
1 cup homemade vegetable or chicken broth
1 tablespoon arrowroot
1 cup milk
Salt
Freshly ground black pepper, optional
Plain yogurt
Chopped chives or dill weed
Directions
1. Melt the butter in a heavy skillet and saute the onions and green tomatoes until soft but not brown. Puree in the container of an electric blender or food processor, or push through a food mill. Add the broth.
2. Blend the arrowroot with the milk and add to tomato mixture. Bring to a boil, stirring until the mixture thickens. Season with salt and pepper to taste.
