Ingredients

 Green tomatoes2 1/2 Pound
 Medium6 Ounce
 Salt2 Tablespoon
 3/4 teaspoon each of celery seed, mustard seed, and whole allspice
 Small piece of gingerroot
 Garlic1 Clove (5gm)
 1 dried hot red pepper
 Vinegar1 1/4 Cup (16 tbs)
 3/4 teaspoon powdered mustard
 Curry powder1/2 Teaspoon
 Apples1 pound
 Firmly packed brown sugar1/2 Cup (16 tbs)
 Granulated Sugar1 Cup (16 tbs)
 Pimiento2 Tablespoon, chopped

Directions

Wash and stem tomatoes.
Peel onions.
Slice tomatoes and onions thinly.
Sprinkle salt over vegetables in layers.
Let stand overnight.
In the morning drain thoroughly.
Tie whole spices, garlic, and dried red pepper in cheesecloth bag; add to vinegar along with mustard and curry powder.
Peel and core apples, grate on coarse grater, and add to vinegar and spices.
Bring quickly to boil and simmer for 1 minute.
Add sugars; mix well; add well-drained tomatoes and onions.
Bring again to boil.
Add pimiento; simmer for 15 minutes.
Remove spice bag.
Pack pickle into hot sterilized jars.
Seal.
