Green Tomato Chutney Recipe
Ingredients
| 1.5 kg/3 lb green tomatoes | ||
| 2 medium-sized red peppers | ||
| 350 g/12 oz onions | ||
| 350 g/12 oz apples | ||
| 350 g/12 oz sultanas | ||
| 50 g/2 oz mustard seed | ||
| Salt | 1 Teaspoon | |
| 1 medium-sized ginger root, peeled and finely chopped pinch cayenne | ||
| 450 g/1 lb soft brown sugar | ||
| 600 ml/1 pint malt vinegar | ||
Directions
1. Wash and slice the tomatoes, place in a large pan.
2. Wash and remove the seeds from the peppers; chop the flesh.
3. Peel and chop the onions and apples; add to the pan with the remaining ingredients.
4. Simmer very slowly for 2-3 hours until the mixture is thick but still a little runny, stirring occasionally.
5. Pour into clean warm jars, seal and label.
