Green Soup Recipe
Ingredients
3 tbsp (45 ml) butter
1 small onion, chopped
2 small stalks broccoli, pared and diced
5 tbsp (75 ml) flour
2 cups (500 ml) hot chicken stock
1 tsp (5 ml) basil
2 tbsp (30 ml) tomato paste
2 cups (500 ml) hot milk
1 large head broccoli, in flowerets
Salt and pepper
Dash paprika
Directions
Place butter, onion and diced broccoli stalks in casserole.
Cover and microwave 3 minutes.
Mix in flour and season with salt, pepper and paprika; mix very well with wooden spoon.
Cover and microwave 3 minutes.
Stir in chicken stock and basil; correct seasoning.
Add tomato paste and mix well.
Cover and continue microwaving 4 minutes.
Pour in milk and mix well; cover and microwave another 4 minutes.
Add broccoli flowerets, cover and finish microwaving 5 minutes.
Cover and microwave 3 minutes.
