 Chicken broth6 Cup (16 tbs)
 4 carrots, peeled, coarsely chopped
 Whites of 3 leeks, washed, chopped
 Onion1 , chopped
 Spinach2 Cup (16 tbs), chopped
 Lettuce1 , chopped
 Potatoes4 , peeled
 Turnips2 , chopped
 Parsnip1 , chopped
 Ground pepper1 To taste
 Skim milk1 Cup (16 tbs)
 Shallots2 , chopped
 Salt To Taste

Directions

In a saucepan, heat broth.
Add vegetables.
Bring to a boil.
Cover.
Over low heat, simmer 20 minutes or until vegetables are tender.
Let stand to cool slightly.
In a blender, puree mixture.
Season to taste with salt and pepper.
Return soup to saucepan.
Reheat.
Pour into soup tureen.
Swirl milk into mixture.
Sprinkle with chopped shallots, if desired.
