Green Soup Recipe

Ingredients
| Chicken broth | 6 Cup (16 tbs) | |
| 4 carrots, peeled, coarsely chopped | ||
| Whites of 3 leeks, washed, chopped | ||
| Onion | 1 , chopped | |
| Spinach | 2 Cup (16 tbs), chopped | |
| Lettuce | 1 , chopped | |
| Potatoes | 4 , peeled | |
| Turnips | 2 , chopped | |
| Parsnip | 1 , chopped | |
| Ground pepper | 1 To taste | |
| Skim milk | 1 Cup (16 tbs) | |
| Shallots | 2 , chopped | |
| Salt | To Taste | |
Directions
In a saucepan, heat broth.
Add vegetables.
Bring to a boil.
Cover.
Over low heat, simmer 20 minutes or until vegetables are tender.
Let stand to cool slightly.
In a blender, puree mixture.
Season to taste with salt and pepper.
Return soup to saucepan.
Reheat.
Pour into soup tureen.
Swirl milk into mixture.
Sprinkle with chopped shallots, if desired.
Add vegetables.
