Ingredients

 Unsalted peanuts3 Tablespoon
 1 small romaine lettuce, cut crosswise into 8 slices
 Watercress1 Bunch (100gm), separated
 Cucumber1 Small, finley diced
 Seedless raisins1/3 Cup (16 tbs)
 Peanut butter1 Tablespoon (DRESSING)
 Oil1/3 Cup (16 tbs) (DRESSING)
 2 tablespoons cider or wine vinegar
 Pinch of sugar
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1) In a large salad bowl combine the watercress sprigs, finely diced cucumber and sliced romaine lettuce.
2) In a medium bowl add the peanut butter, beat in the oil gradually until smooth and glossy.
3) Beat in the sugar and vineger until well blended and sprinkle with salt and pepper to taste.
4) In the salad bowl add the peanuts and raisins, pour over the dressing and gently toss until the salad is well coated with the dressing.

SERVING
5) Serve immediately on a nice plate.
