Green Pepper And Endive Salad Recipe
Ingredients
| 1 head curly endive | ||
| 1 stalk tender, inner celery | ||
| Green pepper | 1/2 To taste | |
| Wine vinegar | 1 1/2 Tablespoon (Dressing:) | |
| Oil | 6 Tablespoon (Dressing:) | |
| Salt | 1 Teaspoon (Dressing:) | |
| Ground pepper | 1/4 Teaspoon (Dressing:) | |
| Dry mustard | 1/4 Teaspoon (Dressing:) | |
| Dried tarragon | 1/2 Teaspoon, crushed (Dressing:) | |
Directions
Remove the bitter outer leaves of an endive.
Tear the tender leaves into bite-sized pieces.
Cut the celery into thin diagonal slices.
Cut the green pepper into thin lengthwise slices.
Place the endive in a bowl.
Arrange the celery in the middle and the green peppers around the edge.
Combine the dressing ingredients.
Just before serving, pour over the vegetables, bring to the table, and toss lightly.
