Green Peas With Lettuce Recipe
Ingredients
| Frozen green peas | 2 Pound | |
| 1 tablespoon acceptable margarine | ||
| Onion | 1 Small, finely chopped | |
| Salt | 1/4 Teaspoon | |
| Ground black pepper | 1/2 Teaspoon | |
| 1 to 2 tablespoons homemade Chicken Stock | ||
| 1/2 head lettuce, iceberg or romaine, rinsed, dried and finely shredded | ||
| 1/2 tablespoon chopped fresh thyme or 1/2 teaspoon dried thyme | ||
| Minced parsley | 1 Tablespoon | |
Directions
Shell peas if fresh, defrost if frozen.
In a nonstick skillet, heat margarine over medium-high heat.
Saute onion until transparent, 2 to 3 minutes.
Add peas, salt, pepper and stock.
Cover and cook 1 minute.
Top peas with lettuce.
Cover tightly and cook over low heat 4 to 8 minutes, or until peas are tender.
Sprinkle with herbs; toss and serve hot.
