Ingredients

 Frozen green peas2 Pound
 1 tablespoon acceptable margarine
 Onion1 Small, finely chopped
 Salt1/4 Teaspoon
 Ground black pepper1/2 Teaspoon
 1 to 2 tablespoons homemade Chicken Stock
 1/2 head lettuce, iceberg or romaine, rinsed, dried and finely shredded
 1/2 tablespoon chopped fresh thyme or 1/2 teaspoon dried thyme
 Minced parsley1 Tablespoon

Directions

Shell peas if fresh, defrost if frozen.
In a nonstick skillet, heat margarine over medium-high heat.
Saute onion until transparent, 2 to 3 minutes.
Add peas, salt, pepper and stock.
Cover and cook 1 minute.
Top peas with lettuce.
Cover tightly and cook over low heat 4 to 8 minutes, or until peas are tender.
Sprinkle with herbs; toss and serve hot.
