Green Peas With Avocado Recipe

Ingredients

 
1-3/4 c water
 
2 c peas
 
2 t corn germ oil
 
1 onion, chopped
 
1 /4 head of lettuce, finely shredded
 
2 t honey salt
 
1 t wholewheat flour
 
1 small avocado, cut into 8 thick slices

Directions

Add peas to 1-1/4 cup boiling water and cook for 2 minutes.
Drain.
Heat 1 T oil in saucepan, add onion and lettuce, and cook until soft.
Add peas, 1/2 c boiling water, honey, salt.
Combine flour with 1 T oil, making a smooth paste, then add to peas.
Pour mixture into casserole.
Arrange avocado slices on top.
Cover and bake at 425° for 12 minutes.
