Ingredients

 Butter/Margarine1/4 Cup (16 tbs)
 Lettuce - 1 small head, finely shredded
 Peas - 6 cups, fresh OR frozen -about 6 lbs. in shell, or 4 packages, 10 oz. each
 Parsley sprigs8 , tied
 Salt2 Teaspoon
 Sugar1/2 Teaspoon
 Nutmeg - 1/8 teaspoon, grounded
 All-purpose flour and butter or margarine - 1 tablespoon each

Directions

MAKING

1) Take a pan and add 1/4 cup butter.
2) Melt the butter and add lettuce.
3) Cover the lettuce with layers of peas and then add parsley, salt, sugar and nutmeg.
4) Cover the pan and cook for 10 minutes on medium heat.
5) Combine the flour and 1 tablespoon of butter in a bowl.
6) Add flour mixture to the peas and cook for few minutes.

SERVING

7) Discard the parsley and serve the dish immediately.
