Green Peas, French Style Recipe
Ingredients
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| Lettuce - 1 small head, finely shredded | ||
| Peas - 6 cups, fresh OR frozen -about 6 lbs. in shell, or 4 packages, 10 oz. each | ||
| Parsley sprigs | 8 , tied | |
| Salt | 2 Teaspoon | |
| Sugar | 1/2 Teaspoon | |
| Nutmeg - 1/8 teaspoon, grounded | ||
| All-purpose flour and butter or margarine - 1 tablespoon each | ||
Directions
MAKING
1) Take a pan and add 1/4 cup butter.
2) Melt the butter and add lettuce.
3) Cover the lettuce with layers of peas and then add parsley, salt, sugar and nutmeg.
4) Cover the pan and cook for 10 minutes on medium heat.
5) Combine the flour and 1 tablespoon of butter in a bowl.
6) Add flour mixture to the peas and cook for few minutes.
SERVING
7) Discard the parsley and serve the dish immediately.
