Green Peas French Style Recipe
Ingredients
| 500 gms. green peas shelled | ||
| Onions spring | 5 , sliced | |
| 2 cups finely shredded lettuce or young spinach | ||
| Cheese | 1/2 Cup (16 tbs), grated | |
| Parsley sprigs | 1 | |
| Mint sprig | 1 | |
| 1 cup/250 ml. vegetable stock | ||
| Ground pepper | 1/2 Teaspoon (Leveled) | |
| Chilli powder | 1 Teaspoon | |
| Ground roasted cumin | 1 Teaspoon | |
| Plain flour | 1 Tablespoon | |
| Butter/Margarine | 1 Tablespoon | |
| Salt and sugar to taste | ||
| Salt | To Taste | |
Directions
1. Melt butter or margarine in a sauce pan. Add spring onions, fry for 1-2 minutes, add peas with salt, pepper, sugar, chilli powder. Mix well.
2. Add mint and parsley sprigs and stock or water. Cover and simmer for 10 minutes.
3. Remove mint and parsley sprigs, add shredded lettuce. Stir well and cook for few minutes.
4. Combine together flour and cheese. Add a little at a time to the pea paste and mix gently with a wooden spoon until thickened.
5. Serve hot. Garnish with ground cumin.
