Green Peas And Pearl Onions Recipe
Ingredients
| 3 pounds fresh green peas | ||
| Pearl onions | 1/2 pound, peeled | |
| Butter/Margarine | 2 Tablespoon | |
| All purpose flour | 2 Tablespoon | |
| Milk | 1 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Pinch of ground nutmeg | ||
Directions
Shell and wash peas; cover peas and onions with water in a saucepan, and bring to a boil.
Cover, reduce heat, and simmer 12 to 15 minutes or until peas are tender.
Drain.
Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth.
Cook 1 minute, stirring constantly.
Gradually add milk; cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
Stir in salt, pepper, and nutmeg.
Spoon sauce over vegetables, and toss gently.
