Ingredients

 
8 oz (225 g) dried green peas
 
1/4 CUP (60 ml) salted pork back fat
 
7 cups (1,75 L) water
 
1 onion, finely sliced
 
1 carrot, diced
 
Bay leaf
 
2 tsp (10 ml) celery leaves, finely sliced
 
5 parsley sprigs
 
1/2 tSp (2 ml) chopped savory
 
Salt and pepper

Directions

–  In a stove-top casserole, combine all ingredients and bring to a boil. Boil for 2 minutes. Reduce heat, cover and simmer for about 1 1/2 hours, stirring from time to time.
–  Remove pork fat. Run soup through blender. Adjust seasoning. Decorate with a few small chunks of pork fat and serve.
