Green Pea Soup Recipe

Ingredients
4 tablespoons butter
1 onion, chopped
4 cups fresh peas
1 small head Boston lettuce
2-3 tablespoons chopped mint
2-3 tablespoons flour
4 cups chicken stock
2 cups light cream
Salt and fresh pepper to taste
2 egg yolks
1/2 cup heavy cream
2 tablespoons chopped parsley
Directions
Melt butter in saucepan.
Add onion and cook 2-3 minutes.
Add peas, lettuce, and mint.
Cook 3 minutes.
Sprinkle on flour and cook 2-3 minutes.
Pour on stock and cream.
Bring to boil.
Cook until vegetables are tender.
Puree in blender, food processor, or food mill.
Reheat.
Season with salt and pepper.
Beat egg yolks and heavy cream together in a little bowl and add to soup.
Whisk until soup barely thickens.
Garnish with chopped parsley.
