Easy Green Pea Soup Recipe

Ingredients
1/4 cup butter
4 cups lettuce, hand torn
1 medium size onion, minced
1 tbsp flour
1 tsp sugar
1/4 tsp parsley, chopped
1/4 tsp ground coriander
42 oz canned chicken broth
2 1/4 cups frozen green peas
1 cup milk fresh mint leaves
Directions
In a saucepan, melt butter.
Stirring often, lightly brown lettuce and onion.
Fold in remaining ingredients, except milk and mint leaves.
Bring to a boil.
Cover.
Over low heat, simmer 15 minutes.
Reserve a few green peas for decoration.
In a blender, puree mixture, 1 cup (250 mL) at a time.
Return to saucepan.
Fold in milk.
Reheat without boiling.
