Green Pea Puree Recipe
Green pea puree is a flavorful vegetable puree. Prepared with cooked potatoes, yellow and green onions, the green pea puree is flavored with mint flakes. Served nice and smooth, it can be used in piping for casseroles or as desired.
Ingredients
2 teaspoons unsalted margarine
2 green onions, sliced
1 small yellow cnion, sliced
3 tablespoons dried split green peas, rinsed
1 small all purpose potato, peeled and sliced
1/2 teaspoon mint flakes
1/4 teaspoon sugar
1 1/3 cups water
1 cup fresh green peas or 1 1/3 10 ounce package frozen green peas
Directions
In a medium size heavy saucepan, melt the margarine over moderate heat; add the green onions and yellow onion and cook, uncovered, until soft about 5 minutes.
Mix in the dried peas, potato, mint, sugar, and 1 cup of the water; cover and cook, stirring occasionally, for 30 minutes.
Add the fresh peas and the remaining water if the vegetables look dry; cook, covered, for 5 minutes.
Remove from the heat.
In a food processor or electric blender, puree the mixture for 30 seconds or until smooth.
Mix in the dried peas, potato, mint, sugar, and 1 cup of the water; cover and cook, stirring occasionally, for 30 minutes.
Add the fresh peas and the remaining water if the vegetables look dry; cook, covered, for 5 minutes.
Remove from the heat.
