Ingredients

 225 g/8 oz cold cooked peas
 25 g/1 oz Brazil nuts, chopped
 25 g/1 oz sultanas
 Oranges2 Large
 Celery stick3 , sliced
 French dressing3 Tablespoon
 Parsley2 Tablespoon, chopped

Directions

1. Place peas, nuts and sultanas in a bowl.
2. Using a sharp knife, remove the rind and pith from the oranges and cut the segments out from between the membranes.
3. Add to the bowl with the remaining ingredients.
4. Toss lightly and serve with cold roast duck.
