 Egg yolks4
 Scallions4 Tablespoon, chopped
 Cooked spinach - 1 1/2 cups, chopped
 Fine noodles - 1/2 pound, cooked and drained
 Kosher salt1 Teaspoon
 Egg whites4

Directions

GETTING READY
1) Preheat oven to 350° F.

MAKING
2) Take a mixing bowl and beat egg yolks in it.
3) Add scallions, noodles, salt and spinach. Mix nicely.
4) Fold in egg whites.
5) Take a 1 1/2-quart greased baking dish and pour mixture in it.
6) Bake in the oven for about 30 minutes.

SERVING
7) Serve hot with dairy dishes or meat.
