Green Mousseline Sauce Recipe
Ingredients
| Mayonnaise | 1/2 Cup (16 tbs) (Sauce Bechamel - 1/2 cup) | |
| Cooked spinach - 2 tablespoons, pureed | ||
| Dried tarragon | 1 Pinch (Sauce Bechamel - 1/2 cup) | |
| Hard-cooked egg yolks - 2 , mashed | ||
| Anchovy paste | 1/4 Teaspoon (Sauce Bechamel - 1/2 cup) | |
Directions
MAKING
1.Combine Sauce Bechamel, mayonnaise, spinach, tarragon, egg yolks and anchovy paste well.
2.Blend all the ingredients well and refrigerate.
SERVING
3.Serve with meat
