Green Mango and Fish Curry Recipe
Ingredients
| 1 1/2 cups/375 mL/12 fl oz coconut cream | ||
| Thai green curry paste | 1 Teaspoon | |
| Lemon grass stalk | 1 , soaked | |
| Kaffir lime leaves | 4 , finely sliced | |
| Mango | 1 Large | |
| 500 g/1 lb firm fish fillets, cut into 5 cm/2 in cubes | ||
| 1 tablespoon palm or brown sugar | ||
| Fish sauce | 2 Tablespoon | |
| 1 tablespoon coconut vinegar | ||
| 60 g/2 oz fresh coriander leaves | ||
Directions
1. Place coconut cream, curry paste, lemon grass and lime leaves in a saucepan and bring to the boil, reduce heat and simmer for 5 minutes or until fragrant.
2. Add mango and simmer for 3 minutes. Add fish, sugar and fish sauce and simmer for 3-4 minutes or until fish is cooked. Stir in vinegar and coriander.
