Ingredients

 1 1/2 cups/375 mL/12 fl oz coconut cream
 Thai green curry paste1 Teaspoon
 Lemon grass stalk1 , soaked
 Kaffir lime leaves4 , finely sliced
 Mango1 Large
 500 g/1 lb firm fish fillets, cut into 5 cm/2 in cubes
 1 tablespoon palm or brown sugar
 Fish sauce2 Tablespoon
 1 tablespoon coconut vinegar
 60 g/2 oz fresh coriander leaves

Directions

1. Place coconut cream, curry paste, lemon grass and lime leaves in a saucepan and bring to the boil, reduce heat and simmer for 5 minutes or until fragrant.
2. Add mango and simmer for 3 minutes. Add fish, sugar and fish sauce and simmer for 3-4 minutes or until fish is cooked. Stir in vinegar and coriander.
