Green Beans Deluxe Recipe
Ingredients
| 1 pound green or wax beans | ||
| Boiling water | 2 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Butter/Margarine | 2 Tablespoon | |
| Flour | 2 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Egg yolks | 2 | |
| Lemon juice | 1 Tablespoon | |
Directions
1. Wash the beans, remove strings and ends but do not break. Arrange in 4 equal sized bunches and tie each with clean string which has been dipped in hot water. Drop these into 2 cups boiling water with 1/2 teaspoon salt. Cook 20 minutes.
2. Drain, saving liquid. Melt butter, blend in flour, salt, pepper. Add cooking liquid; stir and simmer the liquid 5 minutes; let it cool slightly, then gradually add the well-beaten egg yolks and lemon juice. Return to the heat and stir 1 minute. Do not let it reach the simmering point.
3. Arrange the bunches of beans on a warmed serving platter. Remove strings. Pour the sauce over the beans.
