Green Beans A La Nicoise Recipe
Ingredients
| Olive oil | 1/2 Cup (16 tbs) | |
| 1 onion, sliced thin | ||
| 1 cup canned Italian plum tomatoes | ||
| Green pepper | 1/2 , chopped | |
| Celery | 1/2 Cup (16 tbs), chopped | |
| Water | 1/4 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Ground black pepper | 1/4 Teaspoon | |
| Cloves | 2 | |
| Bay Leaf | 1 | |
| Parsley sprigs | 6 | |
| Chervil | 1/2 Teaspoon, dried | |
| 1 pound green beans, cooked until tender and drained | ||
Directions
1. In a skillet heat the oil, add the onion and cook until golden brown. Add the tomatoes, green pepper, celery, water, salt and pepper.
2. Tie the cloves, bay leaf, parsley and chervil in a small cheesecloth bag and add to the vegetables. Simmer, uncovered, about twenty-five minutes. Add the beans and continue simmering until the beans are hot. Remove the spice bag.
