Green Bean Salad Recipe
Ingredients
| Green beans | 1 Pound, trimmed | |
| Salt | To Taste | |
| Vinaigrette | 1/2 Cup (16 tbs) | |
| 8 anchovy fillets | ||
| 4 tablespoons thick mayonnaise | ||
| Black olives | 8 , pitted | |
Directions
Drop the beans into salted boiling water.
When the water returns to a boil, reduce the heat and simmer for 5 minutes.
Drain and refresh the beans under cold running water.
Drain the beans well and put in a bowl.
Pour in the vinaigrette and leave for 1 hour.
Arrange the beans neatly in stacks on 4 plates.
Slit the anchovy fillets in half lengthwise and lay them across the beans.
Spoon the mayonnaise in between the anchovies.
Put the olives on top.
Serve chilled.
