Green Bean And Mushroom Salad Recipe
Ingredients
| Green beans | 3/4 pound, trimmed | |
| Water | 1/4 Cup (16 tbs) | |
| 1/4 cup low calorie mayonnaise | ||
| 3 tablespoons chopped green onions | ||
| Lemon juice | 2 Tablespoon | |
| Olive oil | 1 1/2 Tablespoon | |
| Dijon style Mustard | 1 Tablespoon | |
| 2 cups fresh mushroom slices | ||
| Red bell pepper | 1/4 Cup (16 tbs), chopped | |
| 1 tablespoon minced fresh basil or 3/4 teaspoon dried basil leaves, crushed | ||
| Black pepper | 1 Dash | |
Directions
To Microwave: Cut beans into 1 1/2 inch pieces; place in 1 1/2-quart microwave-safe dish.
Add water; cover.
Microwave on HIGH (100% power) 5 to 6 minutes or until beans are crisp-tender, stirring halfway through cooking; drain.
Cover beans with ice water to stop further cooking; set aside.
Combine mayonnaise, green onions, lemon juice, oil and mustard in large bowl; mix well.
Add drained beans, mushrooms, red pepper and basil; mix lightly.
Cover; refrigerate several hours.
Season with black pepper
Add water; cover.
