1 slightly beaten egg
 
1/4 cup cream style cottage cheese
 
1/4 cup tomato paste
 
2 tablespoons fine dry seasoned bread crumbs
 
2 tablespoons finely chopped celery
 
2 tablespoons finely chopped onion
 
1/2 teaspoon garlic salt
 
1/4 teaspoon ground cinnamon
 
1/2 pound lean ground beef or lamb
 
8 manicotti shells
 
1 recipe Cream Sauce
 
1 recipe Eggplant Relish (optional)
 
2 tablespoons grated Parmesan cheese
 
Ground cinnamon (optional)
 
Celery leaves

Directions

Microwave directions: For filling, in a medium mixing bowl combine the egg, cottage cheese, tomato paste, bread crumbs, celery, onion, garlic salt, and the 1/4 teaspoon cinnamon.
Add the beef or lamb; mix well.
Using a small spoon, generously fill the uncooked manicotti shells with meat mixture.
Arrange filled manicotti shells in a 10x6x2 inch nonmetal microwave-safe baking dish.
Add enough hot water to completely cover pasta.
Cover dish with vented heavy-duty clear plastic wrap; micro cook on 100% power (HIGH) for 20 minutes, turning dish a quarter turn every 5 minutes.
Let stand, covered, for 15 minutes.
Meanwhile, prepare Cream Sauce.
If desired, prepare eggplant Relish.
Use a wide spatula to transfer manicot ti to a serving platter.
Pour Cream Sauce atop.
Sprinkle with Parmesan cheese and cinnamon, if desired.
Serve with Eggplant Relish and garnish with celery leaves, if desired.
